Coconut Rice | Variety Rice | Lunch Box Recipe

When it comes coconut i take a second to look whether i can cook or take that dish or not. Its very high in calorie. Always have a second look on that. But when it comes coconut rice :) i close my eyes . because the taste with coconut oil wow. one of my mouth watering rice :)


Very easy recipe i would say,

Ingredients:

Channa dal - 2 tsp
urad dal - 2 tsp
green chilly or red chilly - 2 no
Coconut oil - 3 tsp
Grated ginger - 1 tsp {optional}
Mustard seeds - 1 tsp
curry leaves - for tempering.
Coconut shredded or grated - 1 cup
cooked rice - 1 to 1 1/2 cup { u can ensure by seeing the rice and coconut )
ground nut -2 tsp {optional}
Method:
Heat the tawa and add the coconut oil once heat add the mustard let it splutter then add the channa dal and urad dal along with chilly  saute till it gets semi brown. 

now add the curry leaves, coconut grated, ground nut,grated ginger and adjust salt. saute well till nice aroma comes.switch off the flame. add the cooked rice and mix well. if needed add one tsp of coconut oil . if the rice is too dry.


well go with Potato fry ,vadagam and chips.
